I generally understand how it works for connecting to my home server remotely.
I just am not sure if it is safe to do things like torrent? Will my ISP still know what I am doing? Does it hide the IP for my CasaOS server when I run qBittorrent?

Yes

Not at all.
Tailscale is not one of those kinds of VPNs. They added support for Mullvad but you would have to have a Mullvad subscription.
Define ‘safe’?
Safe from a 3rd party eves-dropping on your traffic? Yes it is based on wireguard which is the gold standard.
Safe from a nation state wanting to intercept your traffic? - possibly?
Safe from a internet privacy perspective? - no it’s not that type of VPN. If you are browsing the internet over tailscale then you have to connect to an ISP at some point and that ISP will then be able to see your traffic
Tailscale is not tor
Any support for NordVPN? I tried that first but I cannot overcome issues when trying to login. It returns a link to open in the browser which I have not figured out how to do in CasaOS
No. Tailscale only works with Mullvad at this time, if that’s what you’re looking for.
If you want to use Nord, you’ll need to manually configure it in the real OS running Casa. CasaOS isn’t really an OS…you’re running it on either Debian or Ubuntu.
Gluetun. Supports Nord.
